Habanero Hot Sauce Recipe


Not for the faint-hearted!

Ingredients
* 1 small onion, chopped
* 2 cloves garlic, chopped
* 1 tablespoon vegetable oil
* 1 cup carrots, chopped
* 2 cups water
* 3 Habanero chilies, minced (use 4 or 5 if you want fire in a bottle)
* 3 tablespoons fresh lime juice
* 3 tablespoons white vinegar
* 1 teaspoon salt
Directions
1. Sauté onion in oil until soft. Add carrots and water. Bring to boil,reduce heat,and simmer until the carrots are tender.
2. Remove from heat .
3. Combine carrot/onion mix with all remaining ingredients in a food processor and puree until smooth.
4. Pour into sterilized jars and seal.
