Chipotle Tomatillo Sauce Recipe
Note: The chipotle chiles in adobe sauce is available in the "ethnic food" section of most major markets.
Ingredients
* 2 pounds tomatillos (about 20-25)* 3 cloves garlic, unpeeled
* 1 medium onion, finely chopped
* 3 tablespoons olive oil
* 4 chipotle chiles in adobo sauce (canned)
* 2 teaspoons adobo sauce (from the can of chiles above)
* 1 bunch cilantro, leaves only
* 1 teaspoon salt
* Juice of 1 lime
Directions
1. Husk and wash tomatillos under hot water.2. In a heavy, dry skillet cook tomatillos for 20-25 minutes over medium-high heat until soft and blackened all over. Shake pan every few minutes.
2. Remove tomatillos and place in blender.
3. Sautée onion in 1 tablespoon olive oil until soft. Add garlic just as onion gets soft and cook an additional 1-2 minutes. Do not brown garlic.
4. Add garlic, onion, 2 tablespoons olive oil, chipotles, adobo sauce, cilantro and salt in a blender or food processor with the tomatillos.
5. Process until smooth. Add water if necessary.
6. Add lime juice and blend for a few more seconds.
Makes about 3 cups.
Excellent with enchiladas.
