Caesar Salad Dressing Recipe


You may leave the anchovy out if you do not like them, but it will not be classic Caesar Salad without anchovy. They add a lot of flavor and most people do not even know they are there.

Ingredients
* 2 heads romaine lettuce, cut, washed and dried very well
* 3 egg yolks (should be pasteurized eggs...they are not being cooked)
* 1 Tablespoon. parsley
* juice of 2 lemons
* 1 Tablespoon prepared mustard
* 1/2 cup grated Parmesan cheese
* 2/3 cup olive oil (your best)
* 1 Tablespoon Worcestershire sauce
* 8 anchovy fillets, diced
Directions
1. Wash and dry the lettuce very well. The lettuce leaves must be absolutely dry.
2. Toss the lettuce with the egg yolks
3. Add the parsley, fresh lemon juice, mustard and cheese while continuing to toss.
4. Add the olive oil, Worcestershire and anchovy fillets and toss.
5. Garnish with croutons and serve.
