Sugar Cookie Recipe




Ingredients:
* 1 cup butter, softened (do not substitute margarine)
* 1 cup sugar
* 3/4 cup confectioner's sugar
* 1 cup vegetable oil
* 2 large eggs
* 2 teaspoons vanilla extract (not imitation)
* 1 teaspoon baking soda
* 1 teaspoon cream of tartar
* 1/2 teaspoon salt
* 4 1/4 cups all-purpose flour
* 1/2 cup sugar sprinkles (optional)

Directions:
1. Preheat oven to 325 degrees F.
2. Prepare baking sheet(s) by lining with parchment paper or spraying with vegetable shortening.
3. Using an electric mixer, beat butter until creamy. Add sugar and confectioner's' sugar and continue beating until fluffy.
4. Add eggs one at a time and beat after each addition. Mix in vanilla.
5. On low-medium speed, mix in vegetable oil. Scrape bowl. Add baking soda, cream of tartar and salt and blend well.
6. With mixer on low speed, add flour 1 cup at a time. Beat well, and scrape bowl making sure no flour is left in bottom of bowl.
7. Using a cookie scoop or tablespoon, roll into balls on cookie sheet and coat tops with sprinkles if desired. Leaving some space between dough balls for the cookies to spread.
8. Bake at 325 degrees F for 8-10 minutes or until the outside of cookies feel slightly firm to the touch.
9. Remove from oven and cool on racks before storing in airtight containers.
Makes 50-60 Sugar Cookies!
