Oatmeal Cookie Recipe




oatmeal cookies Ingredients:
* 2 cups all purpose white flour
* 1 1/4 cup rolled oats
* 1 teaspoons ground cinnamon
* 1 teaspoons baking soda
* 1/4 teaspoon salt
* 1 cup butter, softened (do not substitute margarine)
* 1 cup sugar
* 1 cup brown sugar
* 2 large eggs
* 1 teaspoons vanilla (not imitation)
* 1 1/2 cups raisins

Directions:
1. Preheat oven to 350 degrees F. 2. Prepare baking sheet(s) by lining with parchment paper or spraying with vegetable shortening.
3. In a large bowl, combine flour, oats, baking soda, cinnamon and salt. Set aside.
4. Using an electric mixer, beat butter on medium speed until creamy.
5. Add brown and white sugar and beat until fluffy.
6. Add eggs one at a time, then add vanilla and beat again.
7. Turn mixer to low speed and add the flour and oats mixture a little at a time.
8. Add raisins and mix well.
9. Using a spoon, measure out cookie dough and place on prepared sheet(s) leaving some room between dough.
10. Bake in pre heated oven for 10-12 minutes or until slightly firm around the edges.
11. Remove to cooling racks and cool completely before storing in airtight containers.
Makes 25-30 Cookies!
