Coconut Macaroon Cookie Recipe
Ingredients:
* 2 egg whites
* 1/3 cup sugar
* 2 tablespoons flour
* Dash salt
* 1/4 teaspoon almond extract
* 2 cups shredded coconut
Directions:
1. Preheat oven to 325 degrees F.
2. Grease and lightly flour a cookie sheet. Set aside.
3. In a medium bowl, beat the egg whites lightly. Add the sugar, flour, salt and almond extract and blend well.
4. Stir in the shredded coconut and mix well.
5. Use a tablespoon and drop dough balls on the cookie sheet about 2 inches apart.
6. Bake for 13 to 17 minutes until set and lightly browned.
Immediately remove from cookie sheet to cooling rack.
