Gingerbread Cookie Recipe
Ingredients:
* 1 cup butter
* 1 cup dark-brown sugar, packed
* 1 cup molasses
* 2 large eggs
* 6 cups sifted all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon baking powder
* 4 teaspoons ground ginger
* 4 teaspoons ground cinnamon
* 1-1/2 teaspoons ground cloves
* 1 teaspoon salt
Directions:
1. In a large bowl, beat together butter and sugar until light and fluffy then beat in eggs and molasses.
2. In another bowl, sift together flour, baking soda, baking powder, spices and salt then stir flour mixture into butter mixture.
3. Divide dough into thirds and wrap each third in plastic wrap and chill for about 1 hour.
4. Preheat oven to 350 degrees F.
5. Roll dough 1/8 inch thick between two pieces of waxed paper. Cut into shapes with cookie cutters.
6. Transfer dough to ungreased cookie sheets.
7. Refrigerate 15 minutes.
8. Bake for 8-10 minutes or until crisp. Do not over cook.
9. Cool on the cookie sheet for 2 or 3 minutes, then transfer to wire racks to cool completely.
