Sweet and Sour Chicken Recipe


Here's a favorite Chinese chicken recipe, Sweet and Sour Chicken.

Ingredients
* 1 whole chicken, 3-4 lbs
* 3/4 teaspoon salt
* 1/2 teaspoon ground black pepper
* 2 tablespoons dark brown sugar
* 2 tablespoons balsamic vinegar
* 2 tablespoons dry vermouth
* Fresh oregano and rosemary, for garnish, optional

Directions
1. Preheat oven to 375 degrees F.
2. Rinse chicken and drain well.
3. Place chicken, breast-side up, on rack in small roasting pan; rub with salt and pepper. Insert meat thermometer into thickest part of thigh. (not touching bone).
4. Roast chicken 45 minutes.
5. While chicken cooks, prepare glaze by combining brown sugar, balsamic vinegar, and vermouth in a small bowl. Stir until sugar dissolves.
6. After chicken has roasted 45 minutes, brush with glaze.
7. Turn oven heat to 400 degrees F and roast chicken 30 minutes longer. Brushing with glaze every 10 minutes.
8. When done chicken should be a deep brown color, thermometer should reach 180 degrees F.
9. Place chicken on a large plate; let stand 15 minutes before carving.
10. Garnish with fresh herbs before serving.
