Rosemary Chicken Recipe


A yummy chicken recipe with a touch of Rosemary.

Ingredients
* 4 chicken breasts, boneless, with skin
* 1 1/2 tablespoons fresh rosemary leaves, chopped (or 1 tablespoon ground, dried rosemary)
* 1 teaspoon(s) grated lemon zest
* vegetable cooking spray
* 1 teaspoon(s) kosher salt
* 1/2 teaspoon(s) freshly ground pepper
* 2/3 cup white wine

Directions
1. Combine rosemary, lemon zest, salt, and pepper in a small cup; rub mixture over chicken.
2. Spray a large nonstick skillet with cooking spray and place over medium heat.
3. Add chicken to skillet, skin side down and cook 5 minutes.
4. Turn chicken over and cover tightly. Continue to cook 10 to 12 minutes, or until skin is crisp and chicken is cooked through.
5. Remove chicken and pour wine into skillet, raise heat to high, and boil 2 minutes, scraping up browned bits from bottom of skillet with a wooden spoon.
6. Spoon wine mix over chicken and serve hot.
