CopyKat Kentucky Fried Chicken Recipe
This recipe requires a pressure cooker but is not hard to make if you have one. It's the pressure cooker that infuses all the famous flavor in this yummy chicken. Please read the note and caution following the recipe.
Ingredients4 chicken breast and 4 chicken legs
6 cups Crisco shortening
1 egg, well beaten
2 cups buttermilk
2 cups flour
2 teaspoons ground pepper
3 tablespoons salt
1 teaspoon msg (optional)
1/8 teaspoon garlic powder
1 dash paprika
Directions
1. Place shortening into the pressure cooker (with the lid OFF) and heat over medium heat until the shortening reaches 400 degrees F.
2. In a small bowl, combine the egg and milk.
3. In a separate bowl, combine the remaining dry ingredients.
4. Dip each piece of chicken into the milk/egg mix until fully moistened.
5. Roll the moistened chicken in the flour mixture until well coated.
6. Drop four of the chicken pieces into the shortening and lock the lid on the pressure cooker.
7. After pressure builds up cook for 10 minutes.
8. Release the lid according to the pressure cooker manufacturer's instructions.
9. Remove the chicken, drain on paper towels and keep warm.
10. Repeat process for the remaining four chicken pieces.
Serve hot with Mom's Famous Southern Cole Slaw.
Note: My pressure cooker instructions says not to put oil in the cooker. This may just be a peculiarity of my specific brand of cooker. Yours may not have this caution. However, I tried it and did not see any ill effects. I think the concern is that oil may clog up the pressure release valve. However, if you clean the valve with detergent immediately after use, it seems like it would be O.K. Anyway, there is no other way to make this recipe. We assume no responsibility for your use of oil in your pressure cooker. Use your own judgment.
CAUTION: The level of oil in the pressure cooker will be determined by the size of your pressure cooker. This recipe is made with a 4 quart cooker. If you use a smaller cooker the oil will reach a higher level. NEVER FILL YOUR PRESSURE COOKER OVER 3/4 FULL (including liquid and chicken).
