Chicken With Mustard Sauce Recipe
This is an easy recipe for crispy fried chicken with a slight mustard tang.
Ingredients* 2 tablespoons cornstarch
* 1 teaspoons dried thyme
* 1 teaspoon paprika
* 1 teaspoon salt
* 1/8 teaspoon Cayenne
* 1 egg
* 2 tablespoons water
* 4 boneless, skinless chicken breasts
* 3 tablespoons cooking oil
SAUCE INGREDIENTS:
* 1 cup mayonnaise
* 2 tablespoons Dijon mustard
* 1/2 teaspoon white vinegar
* 1/2 teaspoon sugar
* 2 tablespoons chopped fresh parsley
* pinch of cayenne
Directions
1. Combine the thyme, paprika, salt and cayenne in a medium bowl. Mix well
2. Whisk together the cornstarch, egg and 2 tablespoons water in a small bowl.
3. Dip each chicken breast into the egg mixture and then into the spice mixture.
4. In a large nonstick frying pan, heat the oil over moderate heat.
5. Add the chicken to the pan, skin side down and cook for 5 minutes. Turn and continue cooking until the chicken is golden brown and cooked through (Additional 5-6 minutes longer).
6. While chicken cooks, make the sauce by combining the mayonnaise, mustard, vinegar, sugar, parsley, a pinch of cayenne and salt in a small bowl. Mix well.
Serve the chicken with the mustard sauce on the side for dipping or cover top of chicken with sauce.
Very good with Mom's Famous Southern Cole Slaw.
